Roasted Brussels Sprouts, Leek, Onion, & Garlic Salad

hey here’s a healthy lunch recipe i made up today!

get your oven ready by preheating it to 375 degrees

take 2 handfuls of brussels sprouts

(so healthy!)

cut off the ends and slice each one in half

then take 1 leek

(i freaking love leeks so much)

cut off the dark green leaves and the tip

slice in half, lengthwise

and then cut into 1/2 inch slices

(sorry this involves a lot of slicing!)

take 1/2 of a small yellow onion

and cut it into a large dice

(don’t cry!)

take a clove of garlic

smash it!

and cut into a few large pieces

ok.

now put it all in a bowl

drizzle with olive oil

and season with salt and pepper

shake it up nice and good

Image

lay it all out on a cookie sheet or cake pan

and pop it in the oven for 30 minutes or so
